I am still deciding what category to go for. But I believe I have a strong NIW case. If my I-140 is approved, can I apply for an EAD and once I have it can I start working? Do I have to maintain any kind of valid visa during that period? What will be my status then? I will appreciate if someone can please explain this to me or direct me to a thread/page which talks about this.

Thanks for the help! You do not want to use the EAD obtained through the I-485 filing. The reason is that if your I-485 gets rejected (I hope that will not be the case), you will loose your visa status -- thats the only risk. If your I-485 is approved, then theres no problem.
