On the interview, would the immigrant ever be asked what their relationship is with the joint-sponsor?? Also, would they ask questions regarding HOW they support you?

I believe thats irrelevant to the process, USCIS cares about the fact that someone is on the hook for you till you are a US citizen. Unless the person who is a sponsor is using illegal means to obtain $$ that is in turn send to you, you have no need to worry. The joint sponsor could be sending you a bag of kosher meat every Thursday, 20lbs of potatoes, rice and kosher beets, could be considered supporting you. I dont think USCIS expects them to send you cash on a monthly basis.

Ok, so... I completely agree with you that, it is irrelevant to the process. I had already assumed that - key word "assume", so I wasnt positive
but I wanted to know if anyone had a sure answer. Again, I thank you for your response and I really appreciate it but it would be even better if someone can tell me from their personal interview experience. Like, if on the interview, they had ever asked about the joint-sponsor or ANYTHING related to it...

At the interview, the IO primary concern is to make sure your marriage is legitimate, NOT to evade immigration laws of the US. As such, he is going to spend about 80% examining you and your spouse, reviewing evidence that you brought to the interview before making a decision. It would be irresponsible for him/her to worry about your relationship with the joint-sponsor, whereas he determines during his evaluation of your documentation (evidence) that you two are involved in some form of immigration fraud, marriage of convenience. I am yet to come across someone who was quizzed about their joint-sponsor, unless maybe the joint sponsor was a gay porn star and his occupation was written somewhere...which caused the IO to inquire..lol..
