USCIS will stamp your passport, not your expired card. The stamp on your passport will be enough for proving employment eligibility.
If you are clean (no criminal records), they wont deny your renewal application.

If you have a Social Security card without the employment restriction, for employment eligibility purposes you can combine that with a drivers license or state ID, without having to show the GC.
But to answer your question, yes the temporary I-551 stamped in your passport will be sufficient for employment purposes, as long as the stamp and the passport are unexpired.
