What are the ways to get rid of this "Valid for work only with INS authorization" mark on my SS card? Do you have have to become a citizen or can this be gotten rid of with an EAD card?

You need to have a green card or citizenship to remove that restriction. EAD wont get it removed.

Would I simply just give him my SS card and EAD and thats it?

Would I simply just give him my SS card and EAD and thats it? Simply give them your EAD and Work Authorization. They go hand in hand. You wont get rid of the restriction until you have your GC in hand.
