So CRIS updates few weeks ago to "Current Status: Notice Returned as Undeliverable." for my I-485. The same day, I call the customer service line to update to my current address. In response, I get a notice saying they need additional review and they are actively processing my case. What is going on? All I wanted to know was the content of the original undelivered mail.

You moved and changed address without updating your address?
Expect some delay but it should not be long.
Usually 2-3 months from what I noticed with other people in same situation.

I had updated the address online so when I got this update on CRIS, I changed the address through the phone (again).
So if there was a notice out earlier, why are they sending me a note saying they need additional review on a SR thats just updating the address?
Did they lose the original notice or something?

Did they lose the original notice or something? When you move you should update your change twice: online + call CS or file AR-11 or something like that. You can update online only if you are a USC.
